Try these delicious healthy banana muffins. Compared to other muffin recipes these have half the calories and carbs yet offer a satisfying combination of protein, fiber, and healthy fat.
1 1/2 cups whole wheat flour 1 tsp baking powder 1 tsp baking soda Stir together then add 1/2 cup oats 1/2 cup coconut 1/4 cup ground flax 1/2 to 1 cup Chocolate chips Nuts (optional)
The above coconut/oats/flax/chocolate chips amounts can be varied
according to your liking, I just pour them in randomly.
2nd bowl blend together 1/4 cup melted butter 1 egg 1/4 cup brown sugar or agave nectar – I use brown sugar 1 tsp vanilla (optional) 4 large mashed bananas (more bananas = more dry Ingredients, less butter)
Mix the wet ingredients to the dry and spoon into muffin liners.
Bake 350 for 15 minutes
